I use a cast iron frying pan for this, but something else might work. This recipe is simple enough for kids to help you.
Wash a bunch of kale. Remove the large center stem that runs down the center of each leaf. Tear the leaves into smaller pieces and set them aside. All kids can do this part.
Heat over medium high heat, enough olive oil to fully lubricate your pan plus have an extra puddle at the lowest point. Crush and mince one or two cloves of garlic and add them to the pan. Give it a stir to keep the garlic moving, and add some of the kale. (If you add all of it at once, you will lower the heat of the pan too much, and it doesn't turn out as well.) Keep the kale moving. Listen to the sound of the pan . You want it sizzle. If it gets quiet, add a bit more oil until it sizzles and spits again. As the kale cooks down, add the rest in batches. Keep stirring and listening. Ethan usually does this for me. Once it begins to darken add salt to taste and try not to eat most of it out of the pan. I usually cook it until most pieces get crunchy, but use your own judgement.
Serve. Pass a mild vinegar like red wine or balsalmic to drizzle over the greens on your plates. Thie recipe works well for collards and other greens as well.

Soba Noodles with Kale
ReplyDelete8 oz Soba Noodles
1 bunch of kale
2 tbs toasted sesame oil
2 tbs tamari soy sauce
1 tbs toasted sesame seeds
Cook noodles in a large pot according to package directions. Do Not Overcook!! Three minutes before noodles are done, add kale to pot. Cook for 3 minutes. Drain.
Toss noodles with sesame oil and tamari. Sprinkle with sesame seeds.
Serve warm or room temperature.
I cooked mine Ethan's way, then tossed in some slivered toasted almonds. Delicious and so simple!

INGREDIENTS (Nutrition)
8 cups chicken broth
1 bunch kale, rinsed and sliced
1 1/2 pounds potatoes, cut into chunks
1 pound diced fully cooked turkey ham
4 cloves garlic, chopped
freshly ground black pepper to taste
DIRECTIONS
Measure the chicken broth into a large pot. Bring to a boil over medium heat. When it comes to a boil, add the kale, potatoes, ham and garlic. Season with ground black pepper. Simmer covered over low heat for 1 1/2 hours.

1 brat of your choosing, sliced into coins (I had ones made of venision, cheese and jalapenos around)
2 cups raw kale
1 green onion
1 tsp of minced garlic
1 tsp olive oil
salt and pepper
Slice green onion and mince garlic. In a heavy pan, heat the oil. When ready, add the onion and garlic and cook for about a minute, or until the onion begins to get clear. Add brat and cook until just brown. Add kale to pan and cook until wilted, 2 to 3 minutes. Spoon into bowl and enjoy!!
